{Meal Plan}

It was a big day for us.  First I waded through the craziness that is the AXS website to buy Garth Brooks tickets for his May concert.  Holy Moly...who knew waiting in a virtual waiting room could be so stressful.  But nevertheless we got tickets!  So excited!! I am hoping for a rendition of Shameless so Tyler can do an encore of his famous karaoke performance.

Secondly, as I was leaving for the gym this afternoon I noticed a package on our front step.  Our first Tessemae's shipment arrived!  We have been craving some new sauces- especially BBQ- for a few weeks.  BBQ=sugar 99% of the time.  So we really struggled finding a brand in the stores we frequent.  Any suggestions?  We are happy to continue buying Tessemae's but it would be nice to not pay shipping every time!


This week is going to be BANANAS.  For real.  Ryan has a Parents Night Out event at his karate studio on Saturday that we are totally taking advantage of- hello a few hours of adult time.  Tyler works late on Monday and Tuesday.  Ry has karate on Wednesday night.  I work late on Thursday.  This is the crazy life we lead...but it definitely put a kink in meal planning!

I am putting out this post now, leaving some flexibility and some menu choices empty because Lee's Summit Farmer's Market opens for the season on Saturday and, weather permitting, we are going to visit Bonnie View Farm.  I want to wait to fill the empty spots until we shop- gotta love some farm to table options!  Keep checking back for additional meal ideas.

For breakfast and lunch we try to make one large batch of each recipe and divide it up for meals throughout the week.

Breakfast- Breakfast Casserole with Homemade Breakfast Sausage

Lunch- Creamy Chicken Tomato Soup

Dinners-
Friday: Pesto Baked Chicken
     So delicious and so easy! I made the pesto ahead of time, so when it came time to cook I really just had to throw it all together and bake it.  I have bit of Pesto left, so I think I use it in a egg scramble tomorrow for breakfast- honestly it was so good, I recommend doubling the batch and having it to top all kinds of things- or just by the spoonful.


Sunday: Walnut Crusted Lemon Chicken Piccata I'm so sad because I had such high hopes for this meal.  It. was. awful.  Nothing went well...the walnut crust was totally burned, which in turn meant I couldn't make the sauce in the same pan---because no one wants sauce flavored with char.  We choked down a few bites and instead had a bowl of soup before portioning it for lunches.  Sad day.

Monday: Fish Taco Bowls with homemade tartar sauce(it's just me and Ry, so we have to take advantage of a fish dinner!)

Tuesday: Artichoke and Garlic Chicken Thighs **Maybe...this is another mom and Ryan night...so it could be a good night for some leftovers, but I don't want forget about this recipe..so I am leaving it for now.

Wednesday: BBQ Meatloaf Muffins with Sweet Potato Topping **I plan to make the meatloaf muffins ahead of time (either Monday or Tuesday night), so we can eat quicker after karate.

Thursday: Burgers and Fries (boys night)

Friday: Oven Baked Crispy Chick Thighs with Garlic, Lemon, and Scallions **Obviously you can tell I got a deal on chicken thighs this week.  

Bonus: Because I couldn't pass by this recipe without drooling, I want to find a time to whip these twice baked sweet potatoes with blueberries and pecans...amazing.
