Garlic Bacon Avocado Burgers
These are so delicious and SO easy. I've also made these burgers with chopped jalapeno- equally delicious but I usually half the meat and do part with jalapeno and half without so my kiddo has one without the heat.
I recommend making the bacon ahead of time, using your food processor to chop it into bits and store it in an airtight container until you are ready to use. This will save you time in the long run. In fact, bacon bits are yummy on everything, so make a huge batch...magic.
Sweet Potato Shepherd's Pie
Beef Stew with Tomatoes & Zucchini
This is another one we've made twice. Just like the Shepherd's Pie, we made this for dinner and loved it. So we made a big batch again to portion out for lunches. The first time we made it, we mistakenly used salted, canned tomatoes---hello bloat and water retention. So the second time we bought organic, no salt added tomatoes and seasoned it ourselves to our liking.
Chicken Zucchini Poppers
These delicious little nuggets were the perfect movie night treat. They were so, so easy and would be great for group gatherings.
Almond-Crusted Chicken Nuggets
This might be my favorite thing so far. I used my food processor to grind whole, raw almonds. The first handful I ground into a breadcrumb consistency. The second handful I ground into almond flour to use in place of regular flour. You could definitely do this ahead of time and store in Tupperware until you are ready to use it. Also, I've made this twice- once with chicken tenders and once with chicken nuggets---both we delicious, but the breading definitely held up better with the nuggets.
Enchilada Stuffed Sweet Potatoes
Why do sweet potatoes take so long to bake. So. Frustrating. Anyone have any tips? Anyone tried baking a bunch of sweet potatoes ahead of time? The filling for these sweet potatoes is delicious. The leftovers made a tasty burrito bowl the next day with lettuce, onion, guac, and plantain chips.
Sheet Pan Chicken with Red Potatoes
Oh. My. Word. This was amazing. The chicken was crispy on the outside and juicy on the inside. The potatoes were rustic and hearty. Scallions, thyme, and sage balanced everything perfectly. The only change I will make next time is less oil. I am not sure I needed to oil the pan to begin with. Everything just seemed to have a bit too much liquid.
And last, but certainly not least an AMAZING breakfast casserole .
We subbed zucchini for the spinach and made our own breakfast sausage using some ground pork we bought at the farmer's market and an array of spices (note: we left out the brown sugar and back fat...what the hell is that?). So delicious. We made it on Sunday and were able to eat on it all week for breakfast.
