Food Prep Fun: Savory Breakfast Bake

Sunday Fun Day involves a LOT of food prep for the week.  What I prep changes weekly depending on our meal plan, but one thing is for sure- I'll be prepping this delicious, versatile breakfast casserole that, when paired with a side of fruit, will last all week for me and the hubs!

Once you get the hang of the basics to this casserole- you will find yourself changing it up to your own preferences and what produce you have on hand.  The ingredients I am sharing today are my basic, go-to recipe.  But I will also share variations I have tried.  If you mix it up and add different veggies and meats- tag me in a post and let me know how it turned out!

Savory Breakfast Bake

This recipe has a few components that are cooked separately before it comes together in a casserole dish.  I am breaking up the ingredients and steps to make it easier to follow.

Sweet Potatoes
Ingredients:
2-3 sweet potatoes (depending on size)
2 T olive oil
Salt
Pepper
  1. Preheat oven to 425 degrees.
  2. Wash, peel, and dice sweet potatoes.
  3. Toss with olive oil, salt, and pepper.
  4. Bake for 20 minutes, stirring halfway through.
Sausage & Kale

Ingredients:
1 lb. ground sausage
2 t salt
1.5 t pepper
2 t sage
2 t thyme
1/2 t rosemary
1/2 t nutmeg
1/2 t red pepper flakes
2-3 stems kale (de-stemmed and torn into bite sized pieces)

  1. Begin to brown sausage in a pan over medium-high heat.
  2. Blend seasoning and sprinkle over sausage while browning.
  3. Once sausage is browned, add torn kale.
  4. Allow kale to wilt.
Casserole
Ingredients:
Prepped sweet potatoes
Prepped sausage and kale
12 eggs (whisked)
1 t garlic powder

  1. Preheat oven to 425 degrees (should still be hot from the sweet potatoes).
  2. Lightly Grease a 9 x 12 casserole dish.
  3. Add sweet potatoes, sausage, and kale.  Gently stir.
  4. Whisk eggs and garlic powder.
  5. Pour egg mixture over sweet potatoes and sausage.
  6. Bake for 20-25 minutes or until eggs are set.


Variations-

  • Sausage, 1/2 C Salsa, Spinach- serve with avocado
  • Squash, Zucchini, Onions
