{Meal Plan IV}

Hi, ya'll.  I've tried to really pair down and prioritize over the course of my Whole30 journey.  What started as a body cleanse and food realignment really branched out into more.   Throughout this process, my focus has been:
  • Nutrition:  Obviously.  But more than just what I can eat and what I can't eat...I set aside time to both meal plan and cook nutritious and delicious dishes for my family. Honestly, meal planning has become a hobby of mine over the past 50+ days.  I used to loath creating a plan, making a list and grocery shopping.  Now digging for recipes, organizing my shopping list, and exploring different markets and groceries is actually enjoyable!
  • Movement:  I run and lift almost every day.  Luckily I also have a job that allows me to get my steps in even if I can't get a run in.  
  • Food Talk:  Talk as a family (and with anyone else who will listen) about healthy alternatives, locally produced items, and letting food work for you instead of against you.
  • Transparency:  We have never been great at keeping up this blog.  It's ebbed and flowed over the years.  But I made a promise to myself that if I was going on this journey I wanted to help others go on it, too!  If we make poor choices or a recipe doesn't pan out the way I had hoped- we are going to be honest.  This process isn't easy and I hesitate for anyone to think otherwise!
Now, onto this week's meals.  We were able to make it to the Farmer's Market this morning before the MS Walk.  We picked up ground pork and ground beef four meals this week.  Many of the local farmers don't have chicken available yet- but we are excited for when they do!

Breakfast: 
Sunday: Breakfast Stuffed Peppers-These stuffed peppers were super easy and packed full of flavor. I simply sautéed half a diced onion and red bell pepper, a handful of grape tomatoes, and some spinach. I filled the peppers with the veggie mix, a beaten egg and topped it with the few pieces of bacon we had left from the week. They baked for about 35 minutes at 385. So yummy!  Next time I think I will boil the peppers before stuffing them- I think it will make them more tender.

Monday-Friday: Famous breakfast casserole.  See previous meal pans :)
Lunch: Slow Cooker White Chicken Chili
Dinners:
Sunday: Meatballs and Zoodles- my mom let me borrow her spiralizer---I am so excited!
This was a hit with the fam!  It somehow felt both hearty and light!

Monday: Pesto Baked Chicken
One of my favorite things about this meal is the leftover pesto---
it's so tasty on scrambled eggs!
Tuesday: Buffalo Bacon Burger and homemade Sweet Potato Fries
Wednesday: Slow Cooker Lemon Thyme Chicken- It's belt promotion night at karate and Ryan LOVES "chicken on the bone"...so we will celebrate with this delicious (and easy) whole chicken recipe!
Thursday: Boys Night- I'm hoping to have leftovers from the past several nights that boys can nosh on while I am in class!
Friday: Crispy Veg Garlic Chicken Sheet Pan Meal
