{Meal Plan V}
This week had me like...
Breakfast: Breakfast Casserole (of course...if you are looking for new breakfast ideas---you came to the wrong place. It's just too easy to not do---especially these last few weeks of school)
Lunch:
Sunday- Deconstructed Hamburger Salad- I've been dreaming and drooling about this salad for a few weeks, so when we found grass fed beef on sale at Sprouts today- I knew we could pair it with some leftover produce and pantry staples we had at home to make it come to life. In the end, I am thankful for super sweet husband who whipped this up! Ingredients: Mixed greens, grilled onions, tomatoes, diced pickles, mustard, and beef sliders. So yummy!
Monday-Friday- Shepherd's Pie- This is to die for and super hearty. I will probably double the recipe to ensure we have enough to make it through the week for both Ty and me.
Dinner:
Saturday- Grilled Chicken and Mexican Cauliflower Rice
Sunday- Almond Crusted Chicken Nuggets and Sweet Potato Fries
Monday- Greek Chicken Skillet- Tyler isn't fan of olives...or artichokes. I've
been saving this recipe for just mom & Ry night.
Tuesday- BBQ Meatloaf Muffins with Sweet Potato Topping
Wednesday- Oven Baked Fajitas
Thursday- Roast and Veggies in the Slow Cooker
Friday- Leftovers
This week we spent 130 dollars on ingredients for all of the meals listed above (excluding of course pantry staples like seasonings). Some of that 130 went to cereal and snacks for Ry and the yogurt covered pretzels he earns if he helps keep track of the grocery list while we shop and for some random things we needed like sparkling water and Lara Bars. But even still...6 dinners for 3 people = 18 meals. 1 breakfast for 5 days for 2 people= 10 meals. 1 lunch for 5 days for 2 people = 10 meals. 38 meals for 130.00 = 3.40 per meal. It seems expensive when you are checking out at the market, but it's actually just as cheap as going through the drive thru throughout the week!

On top of my can't see the light at the end of the tunnel attitude right now, it has been raining relentlessly here. We couldn't go to the Farmer's Market this morning and our backyard is a mess. I'm beginning to feel a little like my old friend George.
And because of that, I struggled with putting together this meal plan. I am going to reach day 70 this week, so instead of reinventing the meal- I am going back to some old favorites with just a few newbies mixed in.
