{Meal Plan VI}
We went to the Garth Brooks' concert last night. Wow, was it amazing. But also it made me realize how I am too old to be out until midnight. I am dragging today.
Breakfast- So I think I am going to combine our usual breakfast casserole with this new recipe that I came across. I plan to do breakfast sausage, sweet potatoes and eggs, but mix in some compliant salsa before baking. Sounds like a good Tex Mex breakfast. I think I'll buy some extra avocados to slice on top each morning as a healthy fat.
Lunch- Eggroll in a Bowl
Dinners-
Sunday- Creamy Pesto Zucchini Noodles and Meatballs (just the meatballs- ignore the marina sauce) Sidenote: Do you know how much pine nuts are---INSANE. So I'm going to sub walnuts (which is what I use for my normal pesto recipe)...I'll let you know how it goes!
Monday- Buffalo Chicken Sweet Potatoes I need something quick to throw together because Ryan has baseball at 6 o'clock. I am going to prebake the sweet potatoes during my Sunday prep and make the chicken in the crock-pot.
Tuesday- Hamburger Stew I have class until 7:00 and I want to make sure my boys can eat before then, so this hamburger stew is the perfect, easy crock-put dish!
Wednesday- Pistachio Coconut Chicken Fingers and Homemade Fries. I stinking LOVE chicken fingers and nuggets! We love the previous nugget recipe we've posted for almond crusted chicken nuggets, but then I came across this recipe from Eat the Gains and thought it sounded delicious! I can't wait to try them!
Thursday- Grilled Chicken and Mexican Cauliflower Rice
Friday-Sunday: Camping Weekend. We are taking the camper to Omaha to visit the zoo and celebrate Mother's Day. I am bracing myself for another epic camping adventure. Hopefully this one will be a little drier...with running water...and propane. Is that asking too much? Our last camping outing did not go exactly as planned (click here to read the epic story)- so I am hoping this time to do a true Camping While on Whole30 post. Fingers crossed.
Sunday Prep:
But nevertheless, it's Sunday and my list of to-dos isn't going away...no matter how many excuses I make. I've already checked breakfast (eggs, shredded potato hash, roasted cherry tomatoes, and an orange), Church, grocery shopping, and lunch (grilled steak salad) off my list. Next up is meal prepping. I've listed the things I plan to accomplish during food prep below---but check in on Instagram to see what I actually accomplish!

- Washed and Cut Celery (to serve with Monday's dinner)
- Diced Veggies (for hamburger stew)

- Hardboiled Eggs
- Wash All Veggies and Fruit
