Meal Plan VIII

Ya'll Friday was my last day of school!  What?!?! I know.  I am so excited!  The peacefulness of summer is beginning to wash over me.  I love summer---even though it is a myth that teachers have summers off and I will be working on and off all summer.  But I've got that summer feeling- for sure.

Last weekend we took the camper to Omaha for the weekend. It was the perfect distance from KC and we had an awesome time.  We stayed at the Omaha KOA.  It had super fun amenities that Ryan loved---a giant jumping pillow, a rope course, ladder ball, and a trampoline basketball game.  Not only that, but it was in a great location.  It was about 25 minutes from the Omaha Zoo- which we did on Saturday afternoon and only 10 minutes away from Schram Park and Eugene T Mahoney State Park.  We went to the both of these parks to explore and hike.  If you are thinking about exploring Omaha- I say go for it!  As far as staying on the whole foods plan while camping- we didn't really sway from what we eat while we are at home...that's the benefit of having a camper with a fridge, oven, and stovetop.  The only thing that we ate that we don't regularly eat at home was trail mix (nuts, dried fruit, seeds) and Lara Bars (they are super nice to have when on the trails).

Next weekend we are taking the camper to Bennett Springs State Park.  We made a commitment this year to camp as much as we possibly can---so this trip 3 for the season.  We have 6 more booked!

This Week's Meals:

Breakfast- 
"Famous" Breakfast Casserole- Kale, Breakfast Sausage, Sweet Potato, Zucchini- This is so, so, SO simple and, when baked on Sunday, will last all week for Tyler and me.  Simply cook the veggies of your choice.  I roast diced sweet potatoes and saute zucchini and kale.  I use the seasoning recipe (minus sugar) for the breakfast sausage- I pair it with ground pork from the farmers market and don't make it into patties.  Once all of the veggies and the meat is cooked, combine and dump into a greased casserole dish.  Pour 12 whisked eggs over the mixture and distribute evenly.  Bake for 25ish minutes at 425.  Enjoy!

Dinner-
Monday: Buffalo Chicken Casserole
Tuesday: Sweet Potato Cheeseburger Casserole
Wednesday: Leftovers- Momma is late, so when I put the menu together I decided to do 2 meals that I knew would make more than enough on Monday and Tuesday so Ryan and Ty could just heat up some deliciously, nutritious food!
Thursday: Taco Bowls
Friday: Chicken Cobb Salads
